Mealtime Monday: Vegetarian Lasagna

I recently made vegan lasagna at home, using pureed roasted cauliflower and tofu in place of the cheese.  While it wasn’t bad, it wasn’t lasagna.  Here’s a proper, cheesy, saucy dish of vegetarian lasagna that I ate by the seaside in Mamaia, Romania.  I’ve said it before and I’ll say it again, Romanians do Italian food right!
