I’ve shared lots of beautiful Mexican dishes before. This is not one of them. Served at the counter of a general store in Twin Butte, Alberta, this store-bought tortilla was stuffed with canned black olives and green onions, served with some Uncle Ben’s rice and canned refried beans, with store-bought “guacamole” and pre-shredded cheese dumped on top. I enjoyed my vegetarian meal as an assortment of taxidermied animals looked down at me from their new homes on the wall. Yikes.
