How many ways do you know to prepare a tortilla? Do you know your burritos, tacos, quesadillas, sopes, tostadas, fajitas, flautas and gorditas? How about your tlayudas? Amazingly I lived in Mexico for about eight months and didn’t once hear the word tlayuda. It wasn’t until I returned to the country a second time and visited the city of Oaxaca that I learned about this unique way to make a tortilla into a treat. Tlayudas are made from really big, really thin tortilla and are typically spread with beans, cheese and lettuce, as well as other toppings like meat, avocado and salsa. A good tlayuda is crispy, crunchy, melty and even healthy, making them a must-try for anyone in Oaxaca.
